It’s nearly 10 p.m. and these cookies just came out of the oven! I should have started earlier, but you know how the end of the school year goes. Nothing gets done on time. And my two youngest kids wanted to help, so of course, we moved a bit slow in-between my daughter chugging handfuls of sugar and my son explaining how milk is essential to build muscles. Anyway, I uploaded the video of “this experience” to my YouTube Channel, so it’s also on this site. Once you read this article, you just return to the main page to see the YouTube caption. I titled it “Making Ginger Snaps.” I should have titled it making a big mess and telling your children ten times NOT to eat raw egg!
If you are looking to make a delicious and simple Ginger Snap, well, here it is. This is my mom’s recipe, but like all good things in life, you steal it from your mama! My kids even love these cookies. Personally, I think ginger tastes like soap, but “they say” it is good for you … and since this recipe only calls for a tablespoon of ginger, it is not overbearing!
Here are the ingredients you will need:
- 1 stick of butter
- 1 egg
- 1 cup sugar
- 1/4 cup dark molasses
- 2 cups flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ginger
In bowl number one, mix your first four ingredients – butter, egg, sugar, and molasses.
In bowl number two, mix your final 5 ingredients – flour, cinnamon, baking soda, salt, and ginger.
Slowly pour the dry ingredients from bowl two, into bowl one … and incorporate together.
Use a small ice cream scooper to scoop out balls of dough, roll in your hand and then roll in a bowl of sugar to coat the outside.
Bake using an UNGREASED cookie sheet at 325 for 8-10 minutes for soft/chewy cookies and 10-12 minutes for more firm/crunchy cookies. This recipe makes 3 dozen cookies! Enjoy my friends and let me know of you bake and love as much as we do!
